  • Method

    Heat 1 tablespoons of oil inside a large pan. Add some onions having a pinch of salt, and prepare until translucent, around 3-4 mins. Add some garlic clove and prepare for any minute more.

    Stir within the beans, cumin, chilli powder, oregano, some seasoning and 100ml water. Prepare for five-7 mins, stirring from time to time, or before the beans have softened, then remove in the heat, mash and hang aside.

    Heat the rest of the oil inside a large fry pan more than a medium-high temperature. Crack within the eggs, then lessen the heat to low and prepare gradually before the whites are totally firm.

    To put together, spread the beans to the tortillas, add some tomato plants and jalapenos and sprinkle with cheese. Top with a few avocado, a squeeze of lime juice along with a fried egg, then scatter with coriander. Serve using the lime wedges quietly.
